Gluten-Free and Yummy!

  • 5 c. Gluten free flour blend
  • 1 c. Organic Icing Sugar plus extra for coating, approx. 1-2 cups
  • 2 TBS. Pure Organic Vanilla Extract
  • 1 tsp. Sea Salt
  • 1 c. Shelled Pistachios, pref. organic
  • 1 c. organic dried cherries, chopped
  • 1 c. dried cranberries, chopped
  • 2 c. organic unsalted butter


  • Preheat oven to 350F
  • Grease and flour baking sheet with butter and dust with flour blend.
  • In a large bowl, beat butter with icing sugar using an electric mixer until light and fluffy.
  • Beat in salt and vanilla.
  • Using a wooden spoon or spatula, mix in nuts and fruit just until combined.
  • Drop dough onto baking sheet by tablespoon, or shape into rounds.
  • Bake cookies approx.. 15-20min. until light brown in colour
  • Cool for about 10 min.
  • Place extra icing sugar in a shallow bowl and with warm cookies roll each one in icing sugar until thickly coated and transfer to a pan lined with parchment paper to thoroughly cool.
  • Store in an airtight container and enjoy
  • Makes approx.. 2 doz cookies.
