1 c. Organic Icing Sugar plus extra for coating, approx. 1-2 cups
2 TBS. Pure Organic Vanilla Extract
1 tsp. Sea Salt
1 c. Shelled Pistachios, pref. organic
1 c. organic dried cherries, chopped
1 c. dried cranberries, chopped
2 c. organic unsalted butter
Preheat oven to 350F
Grease and flour baking sheet with butter and dust with flour blend.
In a large bowl, beat butter with icing sugar using an electric mixer until light and fluffy.
Beat in salt and vanilla.
Using a wooden spoon or spatula, mix in nuts and fruit just until combined.
Drop dough onto baking sheet by tablespoon, or shape into rounds.
Bake cookies approx.. 15-20min. until light brown in colour
Cool for about 10 min.
Place extra icing sugar in a shallow bowl and with warm cookies roll each one in icing sugar until thickly coated and transfer to a pan lined with parchment paper to thoroughly cool.
Store in an airtight container and enjoy
