Easy Peasy Coleslaw- keeps great and gets better with time
- 1/2 cup Veganaise
- 1 TBSP.Bubbies horseradish
- 1 TBSP. Organic Dijon Mustard
- 2 TBSP. Balsamic Vinegar
- 2 TBSP. finely diced red onion
- 1/2 grated cabbage-organic if possible
- 2 grated organic carrots
Put first 4 ingredients into a bullit, blender or Vitamix and blend for a minute until emulsified.Mix carrots, onions and cabbage in a large bowl and pour dressing ingredients over and mix well. Add salt and pepper if desired and mix again and let sit in a refrigerator until ready to serve.
Best if made the day before.
