Make ahead of time and freeze

  • ¾ c. unsweetened shredded coconut
  • 6 medjool dates, pitted
  • ¾ c. org. walnuts
  • ½ c. org. grated carrots
  • ¼ c. hemp seeds
  • ¼ c. raw unpasteurized local honey
  • 1 tsp. org. pure vanilla extract
  • 1 tsp. org. cinnamon
  • ½ tsp. org. nutmeg
  • ¼ tsp. org. ground cloves

Keep aside ¼ c coconut in a dish for rolling balls.

Put all ingredients in a food processor and pulse till fully combined.  Form into 1inch balls and roll in reserved coconut, make sure to coat thoroughly. Place on a flat baking sheet and refrigerate for a few hours or overnight.

May be frozen.  Keep in an airtight container in the fridge.
