Superfoods Part #4 – Potatoes

Potatoes are the fourth and final superfood presented in this series. Potatoes have been unjustly maligned in recent times. They have been wrongly associated with diseases such as obesity, diabetes, cancer, Candida overgrowth and many other conditions. The simple truth is potatoes can actually help reverse many illnesses. For example, potatoes are good for people with diabetes because they help stabilize blood sugar. Many fad diets have us avoiding “white foods” such as white rice, white flour, white sugar, and dairy products such as milk, cheese, and yogurt. Don’t cut out potatoes! Potatoes in their natural state are not white and their skin is rich in nutrients such as amino acids, proteins, and phytochemicals. They draw some of the highest concentrations of macronutrients and trace minerals of any plant from the soil. So, what is it about potatoes that is harmful? Nothing.
