Ingredients:
  • 1 c. Bob’s Red Mill shredded unsweetened Coconut
  • 1/3 c. Org. Raw Cashews or Almonds (pre soak overnight and let air dry)
  • 1 vanilla bean, scraped or
  • ½ t. Frontier Org. Vanilla Extract
  • 1 t. Org. Cinnamon
  • Pinch Sea or Himalayan Salt
  • 4 Org. Dates, pitted
  • 2 T. Raw, unpasteurized honey or maple syrup

COATING

  • 1 T. Raw Coconut Sugar
  • 1 t. Org. Cinnamon
  • 1 T. Bob’s shredded unsweet. Coconut

Directions:

  • Place shredded coconut in food processor and process for 30 sec. to 1 minute to release oils.
  • Add in nuts, vanilla, cinnamon, salt and process until mixed and a fine texture.
  • Add in dates, process again and finally add in honey and process again.
  • Mix cinnamon and coconut sugar together in small bowl.
  • Take about 2 t. of mixture into your hands and roll into small balls. Roll balls in coconut sugar and cinnamon mixture.

They are ready to serve, freeze for later or dehydrate at 115*F overnight.
